Ingredients:
- ½ cup chocolate-coated espresso beans
- 1 (12-ounce) package of firm silken tofu
- ¼ cup strong brewed espresso
- ¼ cup sugar
- ⅛ teaspoon salt
- ½ tablespoon lemon juice
- 10 ¼ to ½ inch thick disks of vanilla sponge cake (the disks should be roughly the size of the inside of 6-ounce tall juice or parfait glasses)
- Espresso
- Cocoa powder to garnish
- Chocolate-coated espresso beans to garnish
Directions:

- In a food processor, grind your chocolate-coated espresso beans until they are finely ground.
- Add your tofu, espresso, sugar, lemon juice and salt. Blend together until smooth and reserve.
- Place a sponge cake circle in the bottom of each glass.
- Drizzle your cake with a few drops of espresso.
- Spoon several tablespoons of coffee-tofu mixture over your cake.
- Place another sponge cake circle on top of the coffee-tofu mixture.
- Spoon the remaining coffee-tofu mixture into the shot, reaching almost to the top of the shot containers.
- Chill for at least 30 minutes before serving and garnish with cocoa powder.

- In a 2-quart saucepan, bring 2 cups of water, piloncillo, and the cinnamon stick to a boil.
- Dissolve the masa in the 1/2 cup of water; add to the pan.
- Return to boil; reduce heat to medium and continue to gently boil for 4 or 5 minutes, stirring occasionally.
- Add the milk and continue cooking for 5 more minutes, stirring constantly. Serve very hot in mugs.
