Irish Stew
Ireland’s national dish, Irish Stew is hearty and delicious! The original recipe contains mutton but is more often made with lamb or beef. Regardless of which meat you use, you’ll find yourself making this recipe on cold days all winter long.
Ingredients:
- 2 lbs. boneless blade steaks (or 6 lamb shoulder chops can be substituted)
- 2 lbs. Idaho potatoes (4 med. potatoes) peeled and sliced 1/4-inch thick
- 3 c. onions, peeled, cut in half and thinly sliced
- 2 c. carrots, peeled, and cut into 1-inch lengths
- 12 sprigs fresh thyme, or 1 1/2 tsp.dry thyme
- Salt to taste
- Fresh ground black pepper to taste
- 12 oz. prepared beef broth
- 3 tbsp. flour
- Fresh chopped parsley
Although this dish is traditionally made in the oven, you can cook it in a slow cooker to save time during your busy weeknights!

Colcannon
Nothing pairs better with Irish Stew than Colcannon or Irish Mashed Potatoes! By the 18th century, potatoes became the backbone of the Irish diet and continue to be a staple in Irish households. These creamy mashed potatoes are made with crunchy kale and smooth butter to make the perfect traditional Irish side dish.
Ingredients:
- 2 lbs. potatoes, freshly cooked and mashed
- 1/2 lb. kale, just cooked, drained. and finely chopped (You can substitute with one bunch of scallions, finely chopped)
- 1/2 c. milk, or to desired consistency
- 1/4 c. butter
- Salt and black pepper to taste
If you want to venture from this authentic dish to add a boost of flavor, try adding bacon or cheddar cheese.
Dijon-Glazed Corned Beef with Savory Cabbage and Red Potatoes
If you’re not in the mood for stew and mashed potatoes, this entree serves as a complete meal! Corned beef and cabbage originated as a popular Irish dish by the first generation of Irish-Americans who exchanged the traditional pork recipe with beef. Enjoy this recipe with a Dijon glaze for a twist on a traditional meal.
Ingredients:
- 1 boneless corned beef brisket with seasoning packet (3-1/2 to 4 lbs.)
- 6 cloves garlic, peeled
- 2 tsp. whole black peppercorns
- 2 c. water
- 6 tbsp. butter
- 1 c. thinly sliced green onions, including white and green parts
- 1/2 c. horseradish
- 1/2 tsp. ground black pepper
- 1/4 tsp. salt
- 1 head green cabbage, cored, cut into 6 wedges (1 to 1-1/2 lbs.)
- 1-1/2 lbs. small red-skinned potatoes, cut in half
Glaze:
- 2 tbsp. orange marmalade
- 2 tsp. Dijon mustard
Irish Apple Cake
End your dinner with a divine Irish dessert! The Irish Apple Cake is a traditional Irish dessert that was steamed in pots beside an open fire. For a similar cooking method, bake your cake in a cast iron pan.
Ingredients:
- 2 c. flour
- 2 tsp. baking powder
- 8 tbsp. butter
- 2/3 c. granulated sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 egg, beaten
- 1/2 c. milk
- 1 tsp. vanilla
- Medium apple, sliced thinly (about 1 cup)
- 1 tbsp. sugar
- Dash of ground cloves and a dash of cinnamon
